About Us
During the American industrial era, food production became streamlined — ushering in cheaper, milder-tasting, mass-produced chocolate. Unlike chocolate in its earlier incarnation, when much more of the cacao bean was present, today’s mass-marketed product needs only about 10% cacao and cocoa butter to be considered chocolate.
Similar to what happened in coffee and beer, shortcuts and additives became the norm. As the chocolate industry grew, the unique, robust flavor profiles inherent in cacao beans — and the natural ingredients that complement them — all but disappeared.

At Loon Chocolate, we believe chocolate should be expressive — subtle, savory, and sweet in different ways depending on its origin. Our goal is simple: to help you rediscover what chocolate can be, and to celebrate cacao from around the world — one bar at a time.
All of our chocolate is made in small batches right here in New Hampshire. Visit our chocolate shops in Manchester & Bedford, NH to experience our bean-to-bar process and explore our handcrafted bars in person.

How We Make Our Chocolate
We work exclusively with ethical traders who source cacao from small farm growers. Beans arrive to us raw and are hand-sorted before roasting.
We crack, winnow, and stone-grind our cacao for over 72 hours, then blend it with organic sugar and a touch of organic cocoa butter — nothing more.
