Bean-to-Bar Craft Chocolate Made in New Hampshire
Loon Chocolate is a true bean-to-bar chocolate maker based in New Hampshire. We source ethically grown cacao beans directly from trusted traders and transform them into small-batch craft chocolate using traditional techniques and uncompromising standards.
What Is Bean-to-Bar Chocolate?
Bean-to-bar chocolate means we control every step of the chocolate-making process — from sourcing raw cacao beans to roasting, cracking, winnowing, grinding, tempering, and molding each finished bar.
We source ethically grown cacao beans from trusted traders and begin every batch with careful hand-sorting and roasting to highlight each origin’s unique character.
Unlike mass-produced chocolate, which often relies on pre-processed cocoa liquor and additives, bean-to-bar craft chocolate preserves the true flavor of the cacao bean and highlights the unique character of each origin.
Our Small-Batch Chocolate Process
After roasting, we crack and winnow the beans to remove their shells.
The cacao is then stone-ground for over 72 hours before being blended with organic sugar and a touch of organic cocoa butter — nothing more.
Experience our process in person at our Chocolate Shops in Manchester & Bedford, NH or explore our full collection of craft chocolate online.
